Gardenia yellow color is obtained from the fruit of Gardenia jasminoides Ellis. It is a water-soluble yellow color with Crocin, which is the same ingredient as Saffron yellow, as its principal-ingredient. From long ago, Gardenia jasminoides Ellis was used as a herbal medicine and food color in Asia.
Be easy soluble in water, diluted ethanol and propanediol, not soluble in oil. pH value has almost no influence to its color value. Its steadier than β-carotene in pH4-11. The water solution of the pigment has a bright and stable golden-yellowish hue, especially in alkaline soluble, with the absorbance peak at 440±5nm.
The revivification -resistance and microbe-resistant are excellent. Have a good stability to light , heat and micro be and good dyeing ability to starch and protein. Metal ions have no influence on it but Fe. It becomes black when it meets.
It can be used as a natural pigment for flour products, noodles, cakes, puddings , jam, jelly, candy, cookies, drinks, wine, beverage, dairy product, cocoa product, chocolate product, ice cream, chestnut, pickles, yellow rice, cosmetics, silk cloth, cotton cloth, medicine and Chinese herbs etc.
